Umbrian strudel (rocciata di Assisi)

Abstract

This strudel is all about sweet, wintery flavours, with apples, dried figs, walnuts, almonds, raisins, cinnamon, fennel seeds and lemon zest. The olive oil pastry is easy to make and easy to roll out.
